High Altitude Deluxe Waffles
Serves 2 Serves 4
1 C sifted all purpose flour 2 C sifted all purpose flour
1 1/2 t double-acting baking powder 1 T double-acting baking powder
1/2 t salt 1 t salt
1 1/2 T sugar 3 T sugar
3/4 t cinnamon 1 1/2 t cinnamon
1 egg yolk 2 egg yolks
2 egg whites 4 egg whites
7/8 C milk 1 3/4 C milk
1/4 C cooking oil 1/2 C cooking oil
1/4 t vanilla extract 1/2 t vanilla extract

    Instructions:
  1. Sift flour, then measure. Add baking powder, salt, sugar and cinnamon to flour and sift into mixing bowl. Set aside.
  2. Combine egg yolks, milk, cooking oil and vanilla. Pour into flour mixture and stir just until flour is moistened.
  3. Beat egg whites until stiff peaks are formed. Egg whites should be moist and glossy. Fold egg whites into flour and milk mixture.
  4. Bake 4 to 5 minutes in hot waffle iron.
